Gluten Free Thanksgiving Side Dishes

Here is the challenge. We have a bigish family now 11+ for Thanksgiving. One of our grand babies is gluten intolerant. Found some decent sides: we need to bring a couple to the turkey fry. Added challenge: our oven is dead, new one wont be here till 2026. Figured I ask if anyone has some go to gluten free sides for Thanksgiving.
Found: root veg, roasted squash, roasted veg, etc. Other daughter is bringing the mashers.
 
We are making GF stuffing. Pretty straightforward you just start with gf bread then build as usual for scratch stuffing. Our oldest is celiac.

GF bread can be kinda awful - none of us have found any worth eating. Does it get better in dressing/stuffing?
 
Sides such as green bean casserole (skip the fried onions topping) are gluten free if you change out the can of cream of crap with a home made using potato starch. Salads are normally gluten free if you put the croutons on the side.
Daughter is bringing the taters so that means you are normally a wheat flour adder to mashers?
Yeah, some people over milk their mashers into a soup and add flour back in to thicken

She is 3 and has a pretty open palate, not picky her parents have done a fantastic job with her.
 
Forgot the obvious. Corn bread stuffing. Yes, many corn bread recipes have serious amounts of wheat flour, but there is alternatives
We found some GF options for the cornbread. still debating what we want to make...

No oven , head to the grill . Any mix you like . I use Mike's hot honey at the table .
No salt BBQ rub on the grill .
Grilled yellow squash is pretty good .

Grilled fresh pineapple is killer in my opinion . Brown sugar and some rub .

Make no mistake, GF will never equal a wheat product, that part is frustrating. Although we have found Canyon Bakehouse, and Schar brands to be workable. The Schar even has a sour dough option that my son likes.

In dressing it always tastes fine, it’s more of a texture problem, but if you lightly toast the bread after cubing it works ok. We always make 2 pans of dressing, one traditional and the other GF. No doubt the traditional is better, but my son enjoys his, it does taste good just off texture wise compared to traditional.

Do you get these at Kroger, Whole foods, or??
We have two stores that carry those. One is Walmart, the other is City Market (owned by King Super, owned by Kroger) we also have a Safeway (owned by Albertsons) but they have very few GF options.

BFree is another brand to keep an eye out for. They make some decent baguettes and pita bread.
