Budgies Jerky

Hi. Im Budgie from Australia. (Straya) That's how we pronounce it.lol. I thought I would join up here and get a few tips from you smokin experts. You guys are the best at it and I would love to learn some tips and tricks. Ive been making jerky for about 8 years now and have 13 flavours at the moment. Im always testing out new flavours at home and seeing what works and what doesn't. Anyway, hope to meet a few of you guys at some stage and chat about what we are all here for. Smoked Meat.
 
Hi Budgie. I’m a new member here as well, and a newbie to smoking. You guys smoke Kangaroo? I’ve spent some time in the Wild Wild West (Perth) over the years. Some of my buddies would order Roo steaks in the restaurants. I just couldn’t do it. Nothing wrong with the taste mind you, they just serve it a little too rare for my taste. However, I did tear up the barramundi. Good stuff!

How are ya mate. Nothing wrong with roo if its cooked right. I prefer mine medium to well done. No blood for me. I also make roo jerky and it is beautiful. I go through Perth every 4 weeks on the way to work. I love it there. Barra is nice too although we dont have them here in South Australia. They are a Northern fish unfortunately.

Cheers mate.Far from chilly here. Was 105 F here today and was 115 a few days ago. Bit of rain coming through right now though. Quite humid as there is a Cyclone over the west and it is pushing the cloud and rain SE down to where I am in South Australia. Love summer in Straya!!
