3 Pepper Vortex Wings

Well, it was time to rip off the band-aide and make a batch of wings with this new rub blend. which combines my original Hot Rub an adds Ghost Chili, Carolina Reaper, and Trinidad Moruga Scorpion to kick up the heat level.

Even though I have made small test batches for a few people, this weekend is the first time I have actually tried this one, starting off with the 3 pepper spicy chicken sandwich in posted earlier.

The wings got a light coating of the rub, and they sat for a few minutes while the coals where lit on the kettle.

I flip the wings every 15 minutes, and after the second flip they where starting to make me hungry, and a bit concerned for my digestive tract, especially after eating the spicy chicken sandwich, well two spicy chicken sandwiches last night...

they went on the center of the vortex for a quick finishing sear for a bit of char, that was something I have never done befroe but it took seconds to go from the above to this

Just enough char to let you know these are serious wings, a bit of foreshadowing even...

The initial bite was not really spicy, but then the spice hit, filling my mouth with a rather pleasant bit of heat an flavor. then a short time later, it grew a lot more intense as the next level of pepper kicked in. leaving me sweating an my nose running. the lingering heat on my lips gave the not so subtle warning to wash hands before touching sensitive body parts... IYKYK

It is very likely I will work to dial this one in, and try a few different ratios of the 3 hot peppers. this was pretty close to what I was going for. that intense heat that makes you sweat, but has that flavor where you do not want to stop eating, what i like to call the Thai food effect
