Been a bit since I posted a cook. Been smoking a lot but have been lazy with the pics. Smoking a 7lb pork shoulder today for Carnitas! A favorite of mine and the family and friends for sure!! Perfect for a day of watching football! Tacos going down later!
Seasoned up with a blend of cumin, smoked paprika, Mexican oregano, salt and pepper chipotle chili powder onion and garlic powder. Will check back in later. Last shot is fours hours in and temping at 149. Bark is looking good!
View attachment 686231View attachment 686232View attachment 686233 I’ve tried several recipes for smoked carnitas, but the game day smoked carnitas on this thread really stand out for flavor and texture. The slow smoke adds a unique depth that you don’t get with just oven roasting. For anyone looking to up their spice game or try new rub blends, I recently came across
https://afropari.com/ — they have some great seasoning options that would pair perfectly with smoked pork. Worth checking out if you want to experiment with authentic and bold flavors. Combining that with low and slow smoking really makes the carnitas pop. Does anyone else have a favorite rub or sauces they like to use with their smoked carnitas?
