Smoked Chuck Birria Tacos

Smoking a Chuck roast to make Birria tacos for dinner. Seasoned the Chuck with Salt and Pepper and Morton and Basset Taco seasoning. Pretty tasty blend. Will take it to the stall then in to CI Dutch oven till it shreds apart.

Doing other things while I smoke it so don’t have time to make a homemade Birria sauce and I saw these and they get good reviews so thought I would give them a try.

Directions call for one ball and 4C water. I Enhanced it with beef broth and 1/2 a chopped up onion and more Taco seasoning and SPOG. Tasting pretty good. Heating it up so when I pull the Chuck and put in DO it is hot and no lag on temp.

Pulled at just over 4 hours and temping at 155* Into the DO and back on the smoker. I cut it up into 5 pieces and I missed that shot😂. Looking good so far. Color was looking good and had a nice smoke ring already. Wish I got that cut shot. I was going to finish on the stove top but was having fun with fire so that’s what is happening!

Very happy with this cook! Birria Bombs are damn tasty. Crispy Birria tacos were good!!

Thanks Aaron, Yeah they were tasty for sure!! Made them before but on the stove top, didn't smoke the chuck. This was better for sure. Added good depth to the flavor!!

OK, that's it. I'm going to have to smoke a chuck this season. Been a while, and birria tacos just went back on the meals list for the future too.

Curious about your build there. Did you do anything to the tortillas before they hit the pan?

Yeah I dipped them in the Birria sauce. Yeah Chuck is a favorite of mine for sure!!

Can you elaborate on how you make your homemade Birria sauce?
 
OMG how did I miss this? Man looks great! Smoke chuckie is FANTASTIC for this. Ran something like this a number of times. For awhile I smoked a few chucks during summer to freeze for winter. Re-heated in a crock (dead of winter) and made tacos. Blew my mind how well it held up.
