Not only first attempt at stuffed pork loins but first smoke on new pit!

I took a 9.5 lb loin, cut it in half then butterflied.

1st one is breakfast sausage, red/yellow/green peppers, onions, mozzarella, bacon.

Second one is Red/yellow/green peppers, onions, Portobello mushroom, spinach, mozzarella, bacon


Ready for smoke

We'll see how it turns out

I am concerned about getting accurate IT of the meat. Won't the temp of the "stuffing" potentially be different then of the actual meat?
 
Thanks guys. I was fairly happy for my first attempt. The non sausage one was a little drier. Not dry per se, but drier than the other. Already thinking of what to stuff next one with.
