I've looked at so many great looking pics and recipes on this forum and had a pork loin that I wanted to try. At first, I wanted to stuff the loin following the posts, but realized I am a newbie, and followed the KISS principle.
I basted the pork loin with olive oil and put about five garlic cloves in. Then sprinkled it with kosher salt and a salad grind pepper.
I smoked the loin @ 245F until the internal temp reached 165, which may have been a little high for some, but I had family considerations. I would be comfortable with a lower temp.
I was happy with the way it looked coming out of the smoker. My first attempts just didn't look as good as I've seen here so I was pretty proud of myself.
The meat was a tad dry, but certainly good and when I warmed some leftovers today (closer to the center), I would say it was excellent.
