Going to do some N.C. Chopped BBQ for the Super Bowl. Cooking close to an Eight lb roast tomorrow.
Made some basic rub to cure overnight. 
This is my first time cooking boneless butts. Since the wind is crazy here in the DC Area, I froze the smallest butt for a later smoke.   Will have more pics to share tomorrow.

Actually wouldn't mind the stall.....Kingsford Comp. burns so hot..waiting for coals to die down. Plus it's hella windy out.
 
SS every time you open that door you are adding to the finished time, now leave the door closed I want to see the money shot

I know...but it was open for spritzing.....temp recovers in less than five minutes....just bark building!
 
Finally finished...what I thought was the stall was a misplaced probe.
I added a few shots along the way...




Took it off at 196°, wrapped and will chop after making vinegar sauce!

Should be a hit tomorrow!!

Total cooktime was 9 & 1/2 hours.
