Woke up and ribs were calling me saying, “father’s day dinner, father’s day dinner, father’s day dinner”.
So who was I to fight destiny and say no?

And cut up ready to eat. After ~6hrs at 225-230, tender and ready to eat.

The meat on those ribs is outstanding, and they were intact to. Nice job,

Thanks guys. Forgot to add, I used pecan wood for my smoke.
Feedback from you guys means a lot.
 
To all my smokin’ friends and especially to those who have not yet tried veal ribs. After cooking low and slow, like I said ~6 hrs, they were very tender. The did however need to be well trimmed of fat. Flavor profile is like a delicate beef, texture is beef-like. They seem to take up the smoke very nicely. All in all rich and tasty. I highly recommend as an alternative to traditional beef ribs. Enjoy.
