Thawed some dry aged NYs for dinner, two were 28 day Prime one was 35 day choice then seasoned them up with SPOG and olive oil…

On the Weber sear zone smoking hot….the two 28 days cause they were thick…. Did these lid open to focus on the sear….

Flip one….the sear zone gets crazy hot!

Did the round robin and pulled at a INT 115 to hold in the house oven at 140 to rest….

I put these in the house oven at 375 convection roast after is SPOG’d them and dressed with olive oil. These roasted for 18 mins and then the roasted marrow was added to some whipped herbed butter!!! I forgot to take a pic…sorry

The boy seared these maitake’s up in butter and then finished them with a bit of worsch sauce.

Bingo the plate…..sliced NY (finished INT 130) topped with the seared maitake and then dressed with the bone marrow butter

Oh can forget the salad…..sliced kumato tomato’s with baratta, balsamic reduction, chopped pistachios, and crostini's

this meal kinda just came together after we stopped in the big town GS store and found the mistake’s, split bones, short cake, and kumatos….bingo after an hour of cooking we got home dinner was served!

Thanks Brian and it came together really nicely, its dangerous going to the "big" town LGS as it has ingredients that make a real meal deal!

Thanks Matt! The salad is just fresh and not your average…..we did save a little bit of marrow to scoop onto the crostini's with some burrata…..oh my……

Much appreciated jcam! Yea the marrow is a flavor amplifier beyond belief! It’s hard to see in the pics but the edges of the shrooms were crispy which added a textual aspect to the bite that made the moment….ie a piece of shroom on top is a NY slice, then dragged through the marrow butter….. it was a perfect bite IMOP!
