Awhile back I did an experiment with a ham steak . I took the weight and rubbed the surface with 2% salt . Put it in a plastic bag and held it in the fridge 6 days . Rinsed then heavy smoked . I was looking for a " country salt cured ham " result . It was pretty damn close . Dense , salty and smokey .

Nice. I will have to try that. My wife loves salty hams. I don't cure mine salty.
 
Alright Adam, you're talking my language now. We love ham steaks around here and I have since I was but a wee lad. I gotta say though, I also love seeing those pics of the meat obscured in a cloud of beautiful smoke as your firsat pic is. Kinda takes your breath away :emoji_wink:

I have to admit I have never smoked one before, but that will change with the next one I get!

I'm gonna jump on the bandwagon here.......That just screams out for some eggs and biscuits. Heck I'd even keep the fries and eat em like hashbrowns.
