Doing pork shoulder for football question

    Should I remove the skin to expose more of the fat and should I smoke skin/fat side up or down?

    I would take the skin off and do fat side up, but either way you wont be in the wrong.

    Skin off. What smoker? In my uds fat side down.

    In my mes fat side up.

    Skin off and fat side up is my preference.

    Save the skin and make pellets for cracklin's out of it.
  6. I like skin off and fat side down. I smoke the skin on the side, the dogs and I love it.
