If using pork and beef mix and smoking at low heat should cure be added

What are you calling low heat?

I cook them at 225-250 regularly without cure.

Well, you're not going to pull it until at least an IT of 160, right?

Yep...Smoke at 225+ to an IT of 160 with a 15 minute rest and no Cure needed...JJ

Yep.....as the Chef says....225 and IT of 160, no cure needed.

And as cranky says....you are gonna love fattys, the choices are endless!!!
