Due to popular demand for a creamy version of my Apple Cranberry Sweet Slaw... Here we go.
Creamy Apple Cranberry Sweet Slaw
6c Cabbage (1 medium head), chopped for slaw
2-3c Apple, diced medium
1-1.5c dried Cranberries, chopped
1/2c Sweet onion, diced small
1c chopped Walnuts, can substitute any nut you like
Cheese is an option here.
1-2c crumbled cheese
Any of the 'Blue' cheese varieties, e.g. Bleu, Roquefort, Gorganzola are great.
Then there's Feta, aged Chèvre and Pecorino Romano and Queso Fresco or Cotija
Now lets make the Creamy part
1c mayo
1c plain yogurt or sour cream
1/2c honey
1t ginger powder
1t salt
Place all ingredients in to a bowl and whisk together.
Add to slaw and combine well.
Chill well before serving.
Give it at least four hours, preferably overnight, for the flavors to meld.
