I know the tongue is a tender cut of meat, but the closest I've come to it was when I was a kid and we raised a steer to butcher it up. After putting the steer down and quartering it up I was looking at the thing as the tongue was sticking out. I asked my dad and grandpa if the wanted it and they both said no. I asked if I could cut it out and give it to my dog and they said yes.
Being as I was maybe 9 years old I wanted to get as much as I could for my dog. I grabbed hold of the tongue with one hand and a knife in the other. I planted both feet on either side and began to pull. I have to say I was amazed at how much I was able to pull out! When I couldn't get anymore to come out of the mouth I cut it off with the knife.
I couldn't believe how perfect the meat looked! And I do know my dog ate very well that day!
cook the tongue just like you would a pot roast . When it's done make some cuts in the skin while the tongue is still warm and pull it off. Slice the tongue across the grain and you can eat it w/ the gravy or pan sear it for some killer sammies.
forgot pics. Here is leftover container... tip of tongue at top of pic. Turned out great just fell apart trying to pull it out. I didnt bother slicing. Just pulled off pieces w a fork from the pot.
