After making and throwing out some old pork steaks from freezer I trying to get rid of the older stuff. These in freezer a couple years so time to get er done. Made my usual Asan marinade. Ended up grilling them the next day. Out of the marinade:

I reduced marinade to glaze while grilling:

Was pretty tasty meal:

This my marnade. Gave recipe to friend and he loves it on Salmon:

2 chunks fresh pineapple grated - I keep frozen in freezer, tenderizes
⅓ cup sherry wine
⅓ cup soy sauce
¼ cup rice vinegar
2 Tbsp brown sugar
3 cloves garlic, minced
knob of fresh ginger grated
1 tablespoon hoisin sauce
1 tablespoon chile paste
1 teaspoon sesame oil
 
That looks great Brian, the couple times I made these they came out very tough...maybe the pineapple is the key and not over cook?
 
looks might tasty Brian! Its been a minute two since we have done them....need to fix that!

The sauce sounds awesome, I marked the page to save the recipe for when I catch my next Salmon... If I ever get the chance to catch another Salmon in this F'd up State of CA.

It sounds like it would be good on spatchcocked chicken or Pheasant as well. I have 10 Pheasant I killed last season in the freezer that need to be cooked up. I just might use this marinade/ glaze on them.
I wish I had some quail still, I know it would be great on those little buggers, they are by far my favorite game bird, and fun as heck to hunt.
 
Those look good! made some with a similar marinade a while back.

I couldnt get them tender tho, made them a few times and they were always pretty chewy. How were yours?
