Chuck Street Tacos Again....It’s becoming a Sunday tradition

Well it seems like like street tacos is starting to become a Sunday tradition at our house.....maybe cause it seems to kick the week off right!

Started with this 3.5lb this chuck.

However, I’m jeleous of those 5 lbers you guys are able to get, would just make more left overs!

The rub paste:
Salted Down
1tsp each, cumin, coriander, Mexican oregano, onion & garlic, powder chili power, & sugar
2tsp smoked paprika
3tsp Demi glacé
4tsp Water
1/4 tsp red pepper.

And in the Memphis @ 225 with lil’ devil pellets. Doing this one a little lower temp than the last couple cause I’m not in a hurry.

I’m tuned in! We are taco junkies here, and the more I use chuck, the better I like it.

I also notice our local Costco has prime chuck for $5.99 per lb.

What’s not to love about a bundle of beef that has been seasoned, smoked, braised, & then wrapped in a thin corn shell with more fresh seasons......

Thanks Warren, the rub just sets the tone, especially since I get to smell it on my hands all day, just makes the taste buds run!
 
Well the roast has stalled and started to release it’s golden flavor so time to prep for braising.

A thick sliced oinion, jalapeño, a couple broken garlic cloves, 1 Tbs Demi, pinch of salt, & 2C of beef broth. The liquid is brought to a boil before adding.


Just yum in the making! Really loving the color :-)

Passed, so it is now resting up for dinner in the warming drawer for an hour or so.....time to make salsa....

And now the appetizer: beef nachos! Warmed chips, queso, chuck, jalapeño, grilled sweet onion, & cojita.

The second course, tacos 3 ways: corn shell, cilantro lime rice, chuck, cilantro, then one with grilled sweet onion, one with red onion, & one with queso, all with cojita.

The third course, flour shell, Mexican cheese blend, cilantro lime rice, chuck, grilled onion, red onion, jalapeño, cojita toasted on a griddle!!!
