Well, turkey hunting didn’t happen today so as a consolation price....beef street tacos :-)
Started with two 3.5lbers and they got the southwest rub down.
Salted Down then:
2tsp each, cumin, coriander, Mexican oregano, onion & garlic powder, chili power, & sugar
4tsp smoked paprika
6tsp Demi glacé
8tsp Water
1/2 tsp red pepper.
Oh got a new toy to try for their smoke adventure....
Lots of probes, I’m actually glad I got a new unit as I have discovered all the new ones are going with bent probes or larger probe handles and these don’t fit through the probe grommets that were going in the current build my son and me are working on.
The chucks all probed up for the experience.
This smoke is going to be at 250 so they are ready for a late dinner.
