Meanwhile, pork for eggs. Just used country style ribs. Cheaper and cut from pork butt right?
Rubbed down and put in at 225* with hickory on Weber kettle grill for about 4hrs. or so till 145 it.
Put pork in food chopper, dang neer minced. Mixed yolk with zuchini relish,
spicy brown mustard, Miracle Whip, mayo, little Head Country bbq sauce,
bought for the heck of it one day, little tangy, good fit for this. Ground sea salt and pepper. All to taste.
After stuffed, sprinkled with paprika and little more dry rub.
They were a hit! Took what was left to work. Got gobbled up.
