Chili - Beans or No Beans

If it has beans in it ain't chili - it is chili con carne.

"Texas" chili is beef, onions, garlic, chili, cumin, Mexican oregano, salt and bacon fat to brown the beef and garlic - period.
FYI, chili con carne translates to "chili with meat". I have no strong opinion either way but beans cooked in all that deliciousness are dang good. Given a choice I would go WITH beans but I ain't turning either one away.

The Chili Queens of San Antonio did not have chili con carne parlors - they had chili parlors, and they served chili.
 
Well I did make a post about a no bean chili dog sauce last week that tasted pretty good. I didn't post a follow up to it since I didn't think it needed it's own post. I had so much left over that I added to it a couple days later.

I cooked up a package of lean stew meat. Then added a large can of pinto beans, a small can of cut tomatoes with Italian seasoning, a whole white onion sliced and the chili dog sauce. It came out great.

Had a small bowl for breakfast - a rest in the fridge overnight really brings it together.

A little later today I will make some Lundberg Wild Blend rice and smother a bowl of rice with chili, some diced onions and some shredded Kraft extra sharp cheddar cheese.

Some real comfort food.
 
True Texas Chili has no beans, but I still use black beans in mine to get more yield on the chili and with meat prices these days I need it to go further! I have also been known to finely chop up mushrooms and cabbage to add to my Chili.

With or without it's all good with me. Just don't try to serve me any of that sweet stuff, it's got have some zip. I was planning a trip to the oldest chili cook off when the C19 crap kicked in.

So many chili's, so little time. Each have their place to me. Tex style cubed meat/midwest mild style (Wendy's) with beans/Cincy (Skyline) greek over sketti/Tony Packos Hungarian on a sausage. Put a gun to my head and make me pick a fave? Packos.

I think of it as spaghetti sauce with cinnamon.
Clove/nutmeg. Rumor is a bit of dark chocolate too.

I just think it is a riot that chili "purests" have a fit about beans or no beans in chili put cheese, sour cream etc. on their version of chile, chastise others, and don't bat an eye.

Make chili. Eat chili. Enjoy YOUR version of chili.

If you have a recipe, beans or no beans, I might just give it a try.
