I get folks asking me for this all the time so I decided to update the post. This sausage can easily be stuffed into casings but we choose not to because it makes an amazing patty. Mrs Scar likes to break it up and serve it with mashed taters and some gravy. We have made it for every meal of the day and it is just plain good.
This recipe was invented by my friend Scott from another forum
From the left Jalopeno - Yellow - Red Bell Pepper - Onion- Cilantro - Dried Mango - Garlic
We also add low fat dried milk to absorb some of the moisture and salt and pepper
I cut the chicken into strips so the above ingredients adhere better as they go thru the grinder together.
Mix the ingredients together with the chicken and put in freezer for about 15 min to firm up for a better grind
Here is what it looks like after grinding thru the small plate
Time for the fry test
Here they are bagged into 1# and 1/2 # bags ready for the freezer

Recipe - all are approximate, change to your own taste
Chicken Mango Jalapeno Sausage
6 lbs Chicken ground
1 Red Pepper roasted and finely chopped
1 Yellow Pepper roasted and finely chopped
1 lg Yellow Onion finely chopped
3 Jalapenos minced
4-5 Garlic Cloves
½ bunch Cilantro finely chopped to equal ½ cup
2 ½ oz Dried Mango
¼ cup Powered Milk
Salt and Pepper to taste
Mixed all ingredients in a bowl. Form into a patty and fry until cooked through to test flavors and adjust spices. Form into the number of patties to be used immediately. Freeze the remainder of the mixture for future use.
Serving suggestions:
Serve patties on Hawaiian rolls with chipotle mayonnaise, lettuce and tomato.
Cook like ground beef and serve with mashed potatoes.
