Cheesus, ABTS, and Tri tip oh my!

Just about out of cheese, having a BBQ tonight, so thought might as we'll make a day of it smoking.

It's been upper 60's low 70's for daytime temps. Low thirties at night. So got up early and fired up the double decker Mini with the mailbox mid and the 12" AMNTS burning apple pellets. Just two racks, pepper jack and sharp.

Four hours of smoke, done! Gonna rest a few days and then Wax, yeah that's right, wax this batch. Just for fun!

While the Cheesus was smoking I prepared the ABTS. In order to stretch the pepper supply I boated these instead of leaving whole ( more guests coming than planned!).

Cream cheese, mixture of grated smoked pepper jack and smoked sharp, fresh garden chives, chipotle, garlic, pepper.

Some mini bells rest jalapeños. For the non meat eater guests some without bacon.

More to come! Forgot about the tater salad I made, it still needs to be garnished so I'll wait to photo that when it's ready! Smoked eggs in it of course!
