Cattlemen Cooking

  1. I have a cookout for our local cattlemens group (people who raise cattle) and was wondering what would be good to do for a smoking. I've been doing brisket and fatties the past few meetings and looking for something a little different that contains beef. Any help would be appreciated. Thanks in advance.
     
  2. A tri-tip, ribs, steaks, eye of round....... you can smoke anything. Just monitor IT. Hey do a tongue.

    Meatloaf and fatties are good options.

    I would second the tri-tip.  I do enjoy flank steak covered in Tatonka Dust with Melted Blue cheese on top.  Smoked corned beef ribs aka "Pastrami on a Stick".

    I have a question.  After spending most of their lives with cattle and presumably eating a lot of beef, Are they tired of it yet?  Maybe Smoked Salmon, mussels.  Something a little out of the ordinary.

    I'd do a leg of lamb but I'm just a jerk like that sometimes.
     
  6. Thanks for the replies. Donr you would think that but we don't get alot of smoked beef in South Georgia. Typically it's pork, plus I feel kind of obligated to cook what they are promoting.
     
  7. South Georgia makes me think of Flank steak.,,,,, really Flankin Ribs. A wonderful mix of marrow and meat which slow smoked give a wonderful beef flavor.

    Dino ribs! Big massive meaty tender dino ribs smoked with pecan.

    Smoked Country Sausage

    Smoked Mac & Cheese

    Boy Scout Beans

    Cole Slaw

    Fresh loaf bread

    Sliced onions

    Assorted pickles

    Shallow Oval 20 gallon galvanized stock tank full of chipped block ice and assorted refreshments

  9. Set up a chuckwagon and serve pulled chuck roast.

    I would serve a PP option because cattlemen may get tired of eating beef everyday. Just a thought.
