The family wanted Mexican.
I can do that.

The Menu
Authentic Carnitas
Confetti Rice
Ranch Style Black Beans
Cowboy Caviar
And all the Fixins

Authentic Carnitas
Chunks of pork Butt marinated overnight and then slow braised in lard till tender.
Once tender they're deep fried in the same pan to crisp them.

Marinade in a mix of Sour Orange and Lime juice, salt, garlic, cumin and Bay leaves.

Pan large enough to submerge all the pork in lard or oil.
Add a couple of quartered onions.
Simmer to slow braise for a couple of hours till tender.

Once the pork is tender, remove all the fruit peels, Bay leaves and onion.
Then turn up the heat and deep fry to crisp the pork.
Be sure to salt the pork as you take it out.

Ranch Style Black Beans
Soak a pound of beans overnight
In a stockpot roast a large tomato, jalapeno, onion cut half, 4 cloves garlic
Add beans and 4C chicken stock, 2C water
1T Guajillo, 1T Ancho, 1.5t Cayenne, 2T salt and 1t Mexican oregano
Simmer for several hours, 3-6 hrs or longer

Confetti Rice
Saute a pound of rice till golden
Add 4C vegetable stock
Add 3C Cowboy Caviar or frozen mixed veggies
Bring to boil, cover and simmer for 25-30 minutes

LOL.
My favorite is bacon grease.
Anything that can be fried can be improved upon with bacon grease.
