I got tired of doing this with Chicken.

Chunks of pork shoulder (4lbs) marinated in a blend of Mexican spices, a generous amount of lime juice and some olive oil, and then cooked on my griddle.
Then I saute 2c rice and 1c onion in bacon fat, cook the rice till golden, and lastly add a generous portion (1.5t) of minced garlic and cook for a few more minutes.
Add 2.5c chicken stock and 1.5c salsa casera, lastly add in the pork, bring to a boil and then lower to a simmer and cook for 25-30 minutes.

Add a little green bell pepper, and some broth, and you can call it Mexican gumbo.:emoji_laughing::emoji_thumbsup:

I don't know about Mexican Gumbo, but it's sounds worthy of a try.
I do know that this dish can form a really nice Socarrat just like a good Paella.
And that's my favorite part!

Looks awesome . I'm breaking down a butt in the morning , Might see if I have enough to do this . Never had a bad dish following your methods .

Thanks Chopsaw, that's one of the best compliments ever.
I'll say this, next time after grilling the pork I'm gonna cube into large bite sized pieces before adding to the rice.

And that is exactly why I made two pans of it. :emoji_wink:
One pan just doesn't cut it when feeding a big family with big appetites.
And I want my leftovers too.
