I pulled out a big bag of my Basic Pork Rub,
and rubbed down six racks of St. Louis cut ribs, Memphis style dry rub.
and laid them in a 235° smoker. They ran 7 hours on the thinner racks and 8 on the thickest.

To compliment these I cooked up two skillets of Fondat Potatoes... Damn these are good!

And sauteed some fresh Green Beans with Garlic and Onion.

Then I tried another potato dish, Smashed Taters with Cheese.
Yellow taters boiled till just tender, placed on a well oiled pan, cheese, half a tater, smash the tater and dust well with my Chicken Rub and top with more cheese.
Baked at 400° till the cheese starts to brown.

To go with these I concocted a Sour Cream dipping sauce.
1c sour cream
3/4c mayo
2T lemon juice
1/2c minced red onion
3/4c chopped Italian parsley
1t minced garlic
Salt, black pepper and cumin to taste

The night before I'd prepared a nice batch of one of our favorite slaws.

WTF, two kinds of potatoes . Sign me up for a meal at John's lol

Nice meal there for sure, ribs look perfect, And never thought of the cheese on the bottom side of the smashed taters, now I will have to do them that way next.
And thanks for the how to on the slaw

Lots of great looking food
Special event or just because?
My favorite Sister-n-Law was in town, she took our kids and a cousin on their yearly pilgrimage to DisneyWorld.
So I made a big dinner to celebrate her being here, and becoming kidless for a week.
Wow that is a meal!

LOL, yes'sir two kinds of taters!
We all love our taters, and having my fave SiL visiting meant going All-in cause taters are her favorite food.
I thought about doing Pommes Pave too as a third, but not enough room in the fridge to prep them.

That slaw is good, side dish, lite cold lunch on a hot day or even almost as a Dessert.
