I pulled out a big bag of my Basic Pork Rub,

and rubbed down six racks of St. Louis cut ribs, Memphis style dry rub.
and laid them in a 235° smoker. They ran 7 hours on the thinner racks and 8 on the thickest.
To compliment these I cooked up two skillets of Fondat Potatoes... Damn these are good!

And sauteed some fresh Green Beans with Garlic and Onion.
Then I tried another potato dish, Smashed Taters with Cheese.
Yellow taters boiled till just tender, placed on a well oiled pan, cheese, half a tater, smash the tater and dust well with my Chicken Rub and top with more cheese.
Baked at 400° till the cheese starts to brown.
To go with these I concocted a Sour Cream dipping sauce.
1c sour cream
3/4c mayo
2T lemon juice
1/2c minced red onion
3/4c chopped Italian parsley
1t minced garlic
Salt, black pepper and cumin to taste
The night before I'd prepared a nice batch of one of our favorite slaws.
