Candied Jalapenos w/Qview

    Had a bumper crop of these from last years garden and decided to can some up to give as part of Christmas goodie baskets. My sister in California liked them so much she placed an order with me for more...NOW....lol. They stayed nice and crisp, you got that sweet crunch and then a nice little after burn from the pepper. Thanks for looking. Hmmm, just noticed the tip of the 'lab' inspectors nose at the bottom.[​IMG]

    OK, OK <grin>, thanks for the interest. Got this off the Net last summer knowing what I was looking for but no recipe since I lost my original one.

    1   cup white vinegar

    3   cups sugar

    1/2 tsp garlic powder

    1/2 tsp onion powder

    1/2 tsp cayenne

    1/2 tsp salt

    Combine all in a saucepan and bring to boil. Remove from heat and pour over sliced japs in sterilized jars. Wipe rims and seal. Process in boiling water bath 10 minutes.

    Obviously double or triple for amount of jars. I did a double batch of juice and had some left over after filling 3 pints. Also, JAM those peppers in tight, they shrink a lot. I filled the jars, poured the hot juice in and lightly sealed. When I was done with all the jars I went back and was able to stuff more peppers in the jars before the water bath. They aged well in the jars, didn't get mushy like the green tomatoes I did. Might make a relish or somethng outta them this year to avoid that.

    Hah....funny Les. The 'inspector' is nine months old, 80 pounds and a bottomless pit. He sure knows where the kitchen is when I'm getting ready to smoke something. I also found out the hard way he likes jerky right out of the dehydrator....the crushed red pepper didin't seem to bother him a bit....my kinda dawg.

    Oh yeah....nice twist with the cloves and stix....maybe some onion quarters jammed in the bottom as well to fill up the space when the japs shrink
