Here in Calgary we had a mild weathered thanksgiving giving me the opportunity to smoke the turkey *yumyum*. The only problem I have found smokey any bird is that the skin becomes really chewy, almost inedible. Anyone help w/ this problem, I have heard deep frying after smoking helps. Not looking forward to investing in another "power tool" if not needed.
