I was going to ask what your plans for a drip pan were going to be but I see now. Do make sure you have both burner covered. It's really easy to start a grease fire in a propane unit of the drippings her to the flame. There have been a few units posted here that didn't take that into consideration and by the time they caught it it was too late.

How do you plan to clean your oak racks? Unlike metal wood is porous and can trap the nasties, that form mold and other non food safe items.
 
This has all been a learning process for me but the plan is to put the meat on stainless steel grates and then the stainless grates onto the wood racks. The meat shouldnt touch the oak at that point..... I was just too excited to try it out and knew it was "clean" wood for the first smoke.

I will come up with an even better drip pan system as we learn the new smoker. Maybe one that doesnt take up quite so much room. There are 4 wall brackets for shelves but there will be 8 vertical shelves when I'm done, the lowest one will be dedicated to drip pan duty. I'm definitely open to ideas.

That came out great, Nice work. :points: How did the pellet smoker do in the heat?

Hi Scott, I am very pleased with the design. Once it got up to temperature I placed my hand on the outside of the 3" opening and could feel the draft pulling in air. It fanned the pellet tray to the point of ignition 3 times.... this was right around 220 degrees so I know the box wasn't so hot that they were self combusting. I will have to keep a metal lid on top of the AMNPS to keep it from happening in the future.

There will be a learning curve but so far I think the smoker likes me !!

By the way, is that a BIG grinder plate that the tongs are resting on?

That there my friend is an old style trivet. I would hate to see a meat grinder of that size, lol !!

I can see it now, but from the look of it leaning against the wall it looks like a huge plate.  That would grind a LOT of meat!

I too like the idea of the pellet tray in the tube, that looks like a great plan!
 
It seems the draft almost creates a wind tunnel as the air tries to push through the tube as it narrows. I have a cast iron top plate from a little wood chip box. It is almost the same size as the AMNPS. Next time I will light the pellets and put the top plate on it... then see what happens.

I like being able to see the AMNPS through the vent opening. No need to open the door to see whats going on.

I was finally able to finish all the oak racks... it was the most tedious part of the project.

After alot of internet searching I came up with a great combination for the meat trays. We will be using the full size sheet pans as drip trays, these trays measure 18 x 26. Lowes and Home Depot have NSF chrome racks, which have been mentioned on this website in the past, that can be used as grates. The great thing is that one set of racks measure 14 x 24..... that's the perfect size to set on the sheet pan!

It is the little things in life that excite me! :sausage:

Absolutely great build,Don! Just finished my own S.H. and am now in the process of figuring out the mechanics of actually smoking something. Will probably start with a pork belly for bacon-seems easy enough.Mine is a cold smoke house now,but I'm sure i'll want to do some hot smoking in it down the line.I'm surprised at the number of smoking operations here in northern Ky. Seems to be the thing these days! Good luck with yours! Art
