Where/how would one go about getting fresh ones ??
I live close to the Canadian border for some fresh "squeeky"(you bite down and it squeeks ) cheese curd. I think you have to live close to the cheese folks in NY, Wisc.  etc to get the fresh stuff ! Always available online but not day old fresh !

You can buy curd batter mix online and deep fry your own , they are delicious ! Also quite healthy !

I have a cheese factory close by so they are normally in a couple of local stores nearby.

If you have a high end supermarket nearby or even some smaller local cheese making business close by you might check there.
