First time smoking beef ribs.
First time smoking deer steaks.
Simple rub of spog on both.
Gonna smoke the ribs at 250 for 5 hours.
3 hours in I'll add the deer steaks.
Hopefully the ribs will be done when the deer steaks hit an IT of 135-140

Beef ribs usually take around 6 hours @ 250 using the 3-2-1 method. I think beef ribs benefit from the braise they get when wrapped in foil.

Your deer steaks won't take long at 250. I'd bet close to 1 hour.
