is there anyone on here that might have a jerky reciepe they are willing to share I have only been using the pre package seasoning with the jerky that I make and it taste great but want to venture out. don't mind trying something new but don't want to waste meat if I screw up.

I'm new around here myself. But an old codger... I'm sniffin out new tricks. And these guys have a ton!
I like traditional flavor beef jerky myself, and peppery.
I like these ones I've found off-site. You don't say if you want ground, or solid muscle.
I do both, and trying to decide. Most of mine I and the dog eat anyway. He loves my beef jerky!
Anyway, two of my favorites:

I tend to kick it up with 1/4 tsp Smoked Paprika, and 1/2 tsp Cyan pepper, per pound of meat. (Both powdered) My first stab was with twice that, kind of warm. :eek: And I'm already heavy handed with the Black Pepper.
But I like a little of what I call 'Afterburn' in the back of the throat. ;)

I've made some with flavors, but they didn't seem to go over well, and I would rather make what I like so if I get stuck with it, well, at least I like it. :p

No matter what you make, follow the recipes and you will want to get a jar of Prague Powder. It makes the flavor right. But only use it as directed, and don't taste it ever. I use 1/4 tsp per pound of ground. 1/4 tsp per pound and a half of strip meat. But I only do small batches, no more than a couple of pounds at a time.

There is no such thing as a bad recipe. Just some's better than others. It's a matter of finding what you like.
 
I put the beef in the marinade but then found out I have to go out of town on Wednesday morning until Friday night. How long can I leave it in the marinade? Should I put it in the freezer?
 
Thanks for the reply. I might try and get in done tonight but it will only be in the marinade for 4 hours
 
I myself have marinated beef for up to 2 day my thought is that it helps break it down and make it more tender
 
I've marinated my beef jerky up to 5 days before. 3-4 days isn't uncommon. I do use cure #1 in my marinades, so that might make a safety difference. One the experts should be along shortly.

I've heard the same thing. But having never done the 3-4 days thing, I wondered if the meat might be over flavored.
If it were me, I'd let it set and see how it comes out.
