I bought some beef cheeks at frys. After having a taco drone a local taco place had to try and replicate. I think I used SPG, and maybe the bbq rub…don’t rememberf for sure. Grilled them on the SmokeFire at 300 for a couple hours then put them in a foil pan with some beef broth, until fall apart. Made some street tacos with cilantro, sour cream and salsa.Beef cheeks a excellent. Very tender and succulent. Word of warning, they are a major pain to trim up

The cheeks are a prominent part of barbacoa de cabeza (smoked whole cow's head) in South Texas. These daus, only one commercial establishment, Vera's in the Rio Grande Valley, is grandfathered by the health department to use the traditional pit in the ground. Many other places use no smoke at all these days, 100% cooked indoors.

I've never cooked beef cheeks at home but you've inspired me to give it a shot! Thanks for the h3ads-up on the prep work.

Those look great and you're right - trimming is everything with Beef cheeks. If you're fortunate enough to have a butcher who will prep them correctly for you, you can skip the braise and just slice them. Heaven. If the name puts anyone off, just refer to them as super brisket.

Well that looks pretty darn good. I have seen cheeks at a Walmart once or twice, but they are another rarity in these parts...

When butchered/cleaned up properly, they're about as good as it gets - an easy 1-2 hour cook and almost zero chance of drying out because of all of the melting collagen. Best bet is to find a skilled butcher to clean them up for you. Very labor intensive otherwise.
