Its less than 2 weeks till Christmas... Where did the time go?  We will all be planning menus soon.

One of the things I wanted to "test"   as a snack or appetizer was cured and smoked chicken legs.  The family is a big fan of those turkey legs at Disney World.  Much too big for a snack...  But if I used chicken legs....  So, I thought why not try to make em smaller?


The first thing I did was simmer some pickling  spices on the stove..  Then an important step is to let it cool to room temperature. Mixing hot liquid to cure #1 will kill the curing process. 


I then mix Pops curing brine according to the instruction here.

I use half the salt and my cure always turn out plenty salty. I also low carb it with scurrilous.


Ya know whats amazing?  I'll tell ya,  Its amazing that you can buy this many chicken legs for 8 bucks. That is amazing to me.


I plop them into the curing brine.  They will soak it up in the garage fridge for 24 hours.

Drums are one of my favorites. Leftovers make great lunch options during the work week. I may have to pick some up!
 
I'm in for this one! Chicken legs are always good, but these should be great!
Thanks Buzz.  I think they will be good.   Was going to smoke a brisket tomorrow.  Rain in the forecast... So decided on this. b

I just noticed the odd number of legs.  You're like rain man.  How many toothpicks are on the floor?

246 with 4 left in the box....... yes, yes... 246 toothpicks and 27 legs. if each chicken had 3 legs it would be 9 chickens. yes yes 9 chickens. and 246 toothpicks.

My computer is hosed.... I am fairly literate and can't fix it. I understand that MS understands the problem but has no fix at the current time. I hate when I jump out there and install new software when it first comes out. After way too many years and way too many new OS's You'd think I would learn. AND its about to be bacon sausage andouille and ham season....... AND NO PICTURES!!

I would rather buy slicing and sealing tools than my first store bought computer. I don't get yearly bonuses any more. <Chuckles>

Yeah... It started here last night Gary.  High winds too.  But have since died down.  I'll be under the back porch with the MES today. I really wanted to try a brisket on that new smoker.  But I just didn't want to fight the rain...

We had a lot of wind too, front yard is completely covered in pine needles Still raining here  just emptied my rain gauge it was showing 5 in.
