I did some cured chicken legs using the Vortex on the river last week. They where a big hit and they want me to do them again this week. I did 12 last week but may be able to squeeze 16 but would be pushing it. I wonder how those holders would work in the 22" kettle with vortex? Thinking they might hit the lid being that they would be around the sides?

Brian, I use them in mine, but not with a vortex. I keep the 2 racks close in the middle of the grate...
 
Save the $ for the racks, smoke them in advance to around 160F (parcook) on an easy rig like MES and then rest until serving day. Day of, rub them, fire up the grill to say medium hot, and then grill in batches to reheat.

Thanks Charles. That would work. Just put vortex in and put charcoal around it. For this week I just fit what I can. Doing this on Friday and we usually have about 8 people. Waiting to do one on a Sunday but have more people usually which is where the racks come in. I have 24 curing but saving some to make at the house for me. Cured poultry is so good! I really enjoying grilling on the river.
