I was watching the Thursday night KC Chiefs game last week and they were serving some awesome looking ribs at the game, that totally got by rib craving going.  (The commercial worked, LOL)

We stopped by SC yesterday and picked up a 3 pack of baby back pork ribs. I love these!

Rubbed them down last night and wrapped em up for a night in the fridge.

Went out this morning to preheat the MES and it said 3F on the screen when I turned it on. We'll just have to power through it!

The ended up fall off the bone, and delicious. 

The wife doesn't eat much so I end up wrapping up half racks in foil and bringing them to work for me and my pals.

We have a large lunchroom with 2 ovens, lots of guys bring their leftovers, put them in the oven in the morning at 180F and by 11:30 they are perfect for a nice hot lunch. Darn near as good as just out of the smoker.
