Baby backs and ABT's, 1st smoke on new Yoder

Got my new YS640S seasoned last night, twice. Decided to do a rack of baby backs and learn how the temps run in this thing. Put a probe in each corner of the bottom grate and learned it is very consistent front to back but the right side runs about 25° hotter than the left.

Baby backs were rubbed with Traeger's Garlic chili rub and lots of CBP. Yoder set at 250° pit temp. Used the 2-2-1 method and sauce was Sweet Baby Rays cut with cider vinegar and sirichi and more CBP.
ABT's I cut in half lengthwise, stuffed with cream cheese, cheddar, monterey jack, parmesan, minced and roasted garlic, CBP and dash of chili powder. Wrapped in bacon and smoked for about 1 1/2 hours.

Used the cherry pellets Yoder sent for free in the hopper and A-MAZ-N competition blend pellets in the AMNPTS.
