With all the wet weather we have been having here since mid-May, the Chanterelle mushrooms are popping up...I actually missed the first flush as there were a lot of very large, yet old mushrooms. But I did manage to find enough to make the trip worth while...about 2#...only bad thing....the mosquitoes almost carried me away! LOL! Wow were they BAD!

Large chanterelle that is a little too far gone. Should have been there 10 days ago to pick them....

Now the meal. I called my Cousin and told him of my find. He said-yep! I am in. I told him ribeyes or sous vide venison....either is fine by me. He chose sous vide venison.

Prepping the Venison Backstrap for second sear...cut into 2" streaks...

Torch and butter finish on one side...

Then flip and torch the other side...

Might would have used the grill, but it was raining buckets so we went with the torch.

Cooked perfectly...melt in your mouth like a Filet Mignon! Home run meal tonight!

YUM, that looks epic!!!
Chanterelles are one of my favorite shrooms, I wish I had the places and drive to hunt them still.
 
Nice cook on the deer meat .
Can't do shrooms myself , but I bet that was tasty .
 
Another awesome cook! I've never hunted chanterelles. Anymore as bad as the ticks are here I haven't hunted ramps or morels either.

Thank you jcam! You should have seen the mosquitos! I took a lot of bites to pick those shrooms! LOL! I forgot bug spray! Won't make that mistake again...bug spray is now in my shroom backpack.

We have some acreage here locally with a creek flowing thru… but drier humidity and higher elevation! Any chance they grow here?!

I'm not sure of range of the chanterelle mushroom. I know there are several subspecies that are edible. Best advise I can give you is to locate a mushroom foraging club locally and you can find out what grows in the area and they can show you how to identify many mushrooms so you don't get sick.
