Sounds simple, but I learned my lesson. Recently sous vide cooked a beef cut.
Set up the cook and went to sleep. Woke up, put my glasses on and saw I set the temp 20 degrees over what I intended.
Lowered it but the damage was done. I was aiming for a nice medium rare.
Took it out, pan seared in butter and its own juices.
Medium. Overcooked it. While I still ate it, my dog got his fair share as well.

Who's a good dog?
16 years old, not long left. Went to volunteer at an ASPCA shelter years ago and they gave me the tour.
All the dogs were in kennels going crazy except Dud. He was sitting there, leaning on the wall, silent. I asked what his deal was.
They said he was blind, depressed, had to be hand fed. Estimated he was 8 at the time and would be a tough adoption.
I said no he isnt, thats my new best friend. He has been everywhere, everyday since then.
 
Gotta love people that can adopt old dogs, I can't do it I get too attached and bummed out when they pass away.
Your pup has had a good run at 16 years old, that's impressive for a Lab.

We've got a blind Cocker Spaniel. It's amazing how well they can get along.
 
I had a similar experience making pizza dough. The recipe called for 1⅓ cups of water, but without glasses I read it as 1½ cups. Doesn't sound like much, but the dough was way too wet, and it almost ruined the meal.
 
16 years is a long time for a Lab, and still going strong!!
