Sounds simple, but I learned my lesson. Recently sous vide cooked a beef cut.
Set up the cook and went to sleep. Woke up, put my glasses on and saw I set the temp 20 degrees over what I intended.
Lowered it but the damage was done. I was aiming for a nice medium rare.
Took it out, pan seared in butter and its own juices.
Medium. Overcooked it. While I still ate it, my dog got his fair share as well.
