I've got 4 tenderloins in the Buckboard cure right now and was planning for 7 days and then smoking with a hickory/apple mix. My question is, do I add smoke for the complete time in the smoker or just for a couple of hours and then just leave them in the smoker until done?
Ive never done buckboard bacon but when I do regular bacon, which Id think would be the same,I let mine go for sixteen hours in the smoke. Now the longer you let it smoke the smokier it will be.The time I use I like and it is smokey but not overly smokey. is reader supported and as an Amazon Associate, we may earn commissions from qualifying purchases.
