A Question for all you sausage Pros…

Get some tubed . They've been pre flushed before going on the tube . So you just need to rinse and soak . The instructions say 10 minutes . Soaking longer makes them softer , but this would be a good bet for what you want to do .
I've been buying from Syracuse . I don't like the tubed for hog casings , but they work for the smaller size sheep .
Look under the tab " everything you need to know "
Read the Faqs , and look at the instructions for use . He also talks about his home packs are the same quality as the hanks , not shorts .
Thank you very much, Rich.
I'll check it out tonight, I need to quit procrastinating and order some up.
It would be nice to have some homemade sausage doe Turkey day dressing and cold weather meals. I love this time of year. even though we don't really have four seasons out here in Kali. Where I live we get summer and fall, we rarely get winters out here.
I don't want to have to shovel snow out of the driveways, but a little dusting a few times a year would be nice. I can drive up to Lake Tahoe and be knee deep in the stuff in three hours when I need a winter fix. I can't ski anymore, but I'm great at sitting at the bar near the ski lifts watching the snow bunnies while drinking a hot toddy though. :emoji_thumbsup: :emoji_joy:

Thanks Rich, I just ordered up some stuff from Syracuse C.C.I. I ordered up a hank of the hog 29/32mm , and a hank of the sheep 24/26mm. That should keep me busy for a while.
Thanks for the help.
Dan.

That's what I use . I take them off the tube and store wet in a salt brine , but you can leave them as they are and follow those directions .

That's a good size for the sheep too . I do leave those on the tube . easier to load that way .

My first sausage making adventure will use ground pork butt Italian sausage stuffed with my brand new Hakka 7 lb stuffer using 32mm collagen casings. Never having used collagen before, it's quite an experiment in "easy handling and storage" casings.

In the event that this wasn't as good a choice as I'd thought, I looked over Syracuse tubed casings. They seem to be fairly "easy handling and storage" for natural casings, are priced well for home use, and offer free shipping...even to Hawaii.

I think I'm going to buy a $29 32/35mm "home pack" for use use after a while. It could be that my collagen experiment will be my only use, apart from the 19mm casings I bought for sausage sticks.

Sounds like a good approach . The natural don't , or won't go bad if store correctly .
I've never used the homepaks from Syracuse , but he says they are the same quality as the hanks , just a smaller amount . He states that he doesn't sell " shorts " .

They say leftover casings are good for 6 months if stored according to their directions. Since I'll be a very small-time sausage maker for a consuming audience of just us two, a hank of casings would be way overkill. Even a "home pack" might make a year's worth of sausage, if not more. Time will tell.

These say they are in a resealable brine bag, would they be ready to use? Or would they need soaked first?

He must pack the "shorts" for LEM.

I usually toss casing after 2 years not that they are bad , but just because it is 2 years.

I did the same but got smaller sheep casings. I use the sheep for breakfast links. I don't remember if I got the smallest sheep casing or the next size up but if it off the tube. It's a PITA to get it opened and on a horn!

I ordered the 24-26mm sheep, to make up some coils, that's how Gramp's made his.
My Mom remembered that they use to call it Chevalatta or Sasizza. My Noni called all sausage, Sasizza. I have to pull down my stuffer to make sure I have the small horn, I remember when I got it, it was missing, but I think I replaced it, not sure though.

When I did it , I used 22 mm . 24 - 26 will be perfect .
I have a LEM 5 lb. , and use the 1/2 " O.D. SS tube . Sheep can be a struggle one day , and work with no issues the next day . My " rules " for sheep are , If a casing doesn't go on the tube in 3 tries , put it back and get another one . If they're tubed , it can still be a pain , but a lot easier .
Don't overload . Less casings loaded means less resistance and come off easier . Less or no blowouts .

As far as " Last up to 6 months " ,,, 6 months from when ? That means nothing , and probably legal CYA . This is the bucket I use to store mine wet . Came from the Sausage maker . They don't come like this anymore .

Wish they still used the buckets. I use a freezer container but it don't have a handle and the lid comes off easily. Sooner or later I'll drop it and make a mess.

Do you have any of the large sausage seasoning jars from the sausage maker ? They're stamped HDPE -2 . Approved for food storage and have a threaded lid . I have a few , and use one for the tubed sheep casings .
