Just what I had on hand. Onion, carrot, some milk-soaked white bread for moisture, and an egg. The usual assortment of spices.

Ah.. carrots.. I kinda wondered.. now that's different.. how did you cut there carrots? Or grate them? Did they cook in the meat ok? Or did it end up being crispy carrot bits?
 
I grated them. They were cooked fine. Anything chopped small enough will cook through.
