Master of the Pit
It's been a while, been busy fixing up neglected home. My wife and I have been having so much fun traveling; that our home of 27 years has been neglected. Been busy with painters, roofers, carpenters, plumbers.
I did follow some advice for making some big burgers. I started with 10lbs of 70/30 ground beef. I added mostly lean to make about 20lb. Got some manager specials, beef roasts to grind. Mixed it well with worcheshire. dried onions, dried garlic, Montreal seasoning and a few tablespoons of baking soda.
Sorry not so many photos. Was busy cooking for 60 guys. The burgers were well received. 1/3 lb burgers crispy crust, and moist. I used the blackstone to griddle them. I will do this again! There were 4 of us making burgers, did not take a lot of time. Weighed out 5.3 oz made a few balls for examples and then went to work. Used patty maker and papers.
I may try personal sized meatloaf next time.
