I got my smoker almost a month ago and have been enjoying getting into it. I’ve smoked some chicken, a rack of ribs, and a few steaks. This weekend I smoked my second butt. My first one was a small 4#. I forgot to get pictures of it. This one was 7#. i seasoned it with Creole and spicy beer mustard and SPOG Thursday and let it sit overnight. I started it Friday night about 9:00 with chips in a smoke tube and in the chip tray. I added more chips to the tube after 2 hours, even though it wasn’t empty. I let it run until sometime Saturday afternoon when my meat thermo measured 200. Took the butt out, wrapped in foil and placed in small cooler for a couple of hours. Chopped and finished it off with Chef JimmyJ’s finishing sauce.
