I did a 5.5 lb Boston Butt today for the first time on my new vertical gas smoker..cooked for 8 hrs with cherry,mesuite and Jack Daniels wood..cooked at 225-275 and when I pulled it off I wraped it in hd foil for about 1 1/2 hrs till the side dishes were finished...tater salad,grenn bean caserole, mac-cheese,hawaiian bread...it was goooooooooood........
