Smoked Mac-n-Cheese, Pre-Boil
Another smoked mac-n-cheese recipe, this one is a Pre-Boil recipe where everything is prepped, combined and then cooked.
My other recipe is a No-Boil, no preparation, put everything in the pan and let it cook.

15oz = 6c Elbow/Conchiglie pasta, dried
2 sticks of butter, cut into 1T pats
4T flour
1.5 lb Sharp Cheddar, shredded
1.5 lb Colby Jack, shredded
6c Whole milk, heavy cream or buttermilk
1 large Sweet or Yellow onion, diced
4c French Fried Onions (FFO)
Pre-cook pasta for 5 minutes.
Make a light colored roux out of 4T of the butter and the 4T of flour.
Add in cheese/milk and remaining butter a little at a time till all is combined into a smooth cheese sauce.
Add salt to sauce until the flavor 'Pops!'
Combine pasta and cheese sauce, place into large Dutch oven or two 9x13 casserole dishes.
Crank the heat to 375°.
Total cooking time 2 hrs.
Top with FFO last .5 hr.
Serves 10-12 generous portions.
