[h1]When you first going to smoke smoke something you put in your wood chips how many times should you add more chips or new ones I did brats with apple & hickory it took 3 hrs. I only put chips in once they seem to taste good but the chips were all burned---Ken

If I no longer see any smoke and I feel I need more I put some in then
 
I usually only worry about maintaining the Thin Blue Smoke for the first half of the cooking time.  I just let whatever happens happen for the last half.  As long as I can still smell the smokiness, I consider it good.
 
I seem to recall you have a MES if so, you will probably have to add chips every 1/2 hour or so.
