Color on the ribs is great! Please tell more about the goat cheese: melty, runny, good, bad? I like goat but never considered it for this use.

I take it those are Serranos?

Goat cheese has juuust a bit if tang to it. I bet it pairs nicely with the mild bite of a serrano
 
These peppers are actually Anaheim. The goat cheese is mixed with an egg, whipped. We added sour cream, but next time will try homemade creme fraiche, a bit of hot sauce and dusted with paprika. I also lightly brushed with BBQ sauce to tie it better to the ribs.
 
Really nice color on those ribs, bet they were some kind of tasty.
