Wings & things from the weekend

It been so nice here in Arizona! Got a little time off & HAD to get a smoke in. So I threw as much on the grill as I could defrost fast enough!

First shot at chicken wings. Used Jeff's quick brine for 24 hours. Then added some Kicken' Chicken.



Then put together some Armadillo Eggs. Stuffed them with some large garlic stuffed olives I had in the pantry.


Then some store bought Chicken Sausage sorry no pre-pics? But you know what store bought looks like!

Then to the grill


Here's where I messed up! As you can see after 1 hour in the sausage is done & maybe even the armadillo eggs. I don't know why I didn't take them off? Instead I let them go even longer at the higher 280 for the chicken wings???  Here's what I ended up with


Not a very good pic ( SORRY ) but the eggs were over done & the sausage was way overdone. Not inedible, just not the best?  Oh but those wings came out to be just awesome for my first time. Not sure why I haven't tried them before? Just not a big wing fan, but I might just become a convert now!! Everyone loved them including the wife & kids who don't really like wings either? They all said I need to make these ALOT more. I agree

Looks like you've been busy.

Sauce up the armadillo eggs and use the sausage in a recipe if you are unhappy eating them by themselves.

Great looking food to me.
 
Hey the wings look really good! And so what if the other stuff was overdone....what's the penalty; that you have to smoke up some more? Oh darn! ;-)

Also, for those of us in the milder climate regions where Armadillo's only exist in zoos, what is an Armadillo Egg? Looks like a tasty meatball. I know I could probably just Google it, but it's more fun to talk with someone about it on this forum. Thanks.

Armadillo Eggs........a recipe with a million ideas. Ground meat wrapped around something yummy and smoked.....grilled....baked in the oven.....which ever way works for you. My personal favorite is an ABT wrapped in sausage and put in the smoker and then a couple of min on the grill for a bit of crisp.

I have even used ground venison with a bacon wrap to keep it moist. The ideas are endless.....and always good.

Thanks Sqwib! I did sauce a few. They were still OK, don't think I threw any away. Just a overdone

Thanks Hum.  I guess I could of put a pick in of them sliced? Thye were basically olives wrapped in sausage. I'll see if I can find a sliced pit & post it

Next time just  up that sausage and put it with some taters and eggs or throw it in some sauce and make some chili 

This is the best part of what we do - we get to eat our mistakes 
 
Looks Good. I guess like most smoked goodies, Armadillo Eggs are only limited by your imagination. (And here I thought is was made from Armadillo meat!) Thanks for the pic.
